Time to cook
May. 12th, 2007 01:13 pmWhat with being under the weather and under a deadline, I didn't have much time or energy to cook this past week. Last night I finally got around to making the variant of hiker_chick's recipe for Corn-and-Jalepeno Quesadillas I'd been meaning to try for the last several nights running. They turned out very well, and
fisherbear liked them a lot too. It's nice to have another vegetarian option in the arsenal, although I'll probably try adding more protein to the recipe the next time I make them. Black beans and/or Quorn crumbles would keep the recipe vegetarian while upping the protein count, but given that neither of us are actually vegetarians, I might go for ground turkey breast instead.
Tonight I might try experimenting with another variant on Chicken and Basil Summer Rolls, if I get the chicken marinating in time AND if I get to the grocery store for the basil and sprouts. Everything else I have on hand. If it turns out all right, I'll post the recipe.
