I decided to improvise dinner last night. I had a package of chipotle turkey meatballs, some fetuccine, and a bunch of swiss chard. I braised the meatballs and the swiss chard together in a pan while I heated water and boiled the pasta. When the pasta was al dente, I drained it off and tossed it into the pan with the swiss chard and meatballs. The result? A colorful, yummy, and relatively healthy dinner, even when sprinkled with a little parmesan cheese - and two servings of leftovers for lunches (the recipe made enough for four). Next time I'll add even more swiss chard (I always forget how much chard cooks down), but there was enough.

Yay!

I dutifully got one of the servings out from the refrigerator this morning and carried it with me, intending to eat it for lunch today.

Yay!

...and I forgot the container in the back of the car this morning.

Boo!

Oh well. At least [livejournal.com profile] fisherbear was able to retrieve it and put it into the refrigerator before it could go bad.

That sounds delicious.

Speaking of forgetting stuff, the other day I brought my (nice red leather) daytimer into Freddy's because my shopping list was written in it. Afterward I unloaded the purchases into the car & drove off. Half an hour later I realized: no daytimer. I'd left it in the cart. How do I do these things?

I was SO mad at myself and went back to Freddy's and Home Depot (the big shopping center setup in Redmond at the end of 520, leaving my phone number and asking people if they'd seen my daytimer, and then moping around the parking lot in a frantic state, looking in all the carts. Finally after an hour and a half of working myself up over having lost it, I found the daytimer in a cart, untouched and right where I'd left it.

By the way: I love your icon!

Glad to hear that you found your daytimer! That's a nasty feeling, realizing you left something important all alone in the great big public world. Lost-n-Founds don't seem to be quite as reliable these days, either.

And I'm glad you love the icon! I had fun finding a shot from The Rabbit of Seville. You're welcome to grab it for your own use if you wish; a little Bugs is always a good thing. :-D

Sounds well yummy! I fixed myself turban squash gnocchi in browned butter and braised dino kale last night. Tasty, but the gnocchi were a bit doughy. I'm hoping the butternut gnocchi I made are better.

Mmmm, braised dino kale! Definitely the weather for braised leafy greens. :-D

I was in a meatball mood myself last night (mmmmm....mmmmeatballs....). Took ground pork, chopped ginger, garlic, sweet shoyu, oyster sauce, chili black bean paste and bread crumbs and made Asian-style meatballs for a meatball-tofu-broccoli stir fry which I did up this evening. I sometimes forget how much fun meatballs can be.

Droooool! I don't eat pork much anymore as a general rule, but that'd be worth indulging in. Sounds great!

I wish I could say I put as much time and thought into my meatballs yesterday, but I'm afraid mine were of the "bought a package in the store" variety.
